Happy Independence Day! In my experience, when the flags are out, the grills are hot. Therefore, I’d like to share one of my favorite recipes — one that impresses as a unique combination and provides a wealth of heart-healthy omega-3 fatty acids.
• 1/3 cup jam
• 1 teaspoon Dijon mustard
• ½ teaspoon paprika
• ¼ teaspoon black pepper
• Four 4-ounce salmon filets
• In a small bowl, combine jam, mustard, paprika, and pepper. Wisk until well mixed. Spread jam mixture over salmon.
• Grilling Instructions: Prepare grill for cooking over medium-hot charcoal (moderate heat for gas). Grill, flesh sides down, on foil (covered only if using gas grill) for 4 minutes. Turn fillets over and grill until flesh flakes easily with a fork, 4-6 minutes more.
• Baking instructions: Preheat oven to 350°F and line a 9×13-inch pan with foil. Bake at 350°F for 14-16 minutes or until salmon flakes easily with fork.
